Recipes: Fresh Summer Salads

Bloggers everywhere are excited about heading to local farmer’s markets and finding creative, delicious salad recipes. I know I am! Here’s a list of a few of my favorites. The best part about them? Throwing in some of your favorites fruits or veggies just makes them better.

Fresh corn and black bean salad from Everybody Likes Sandwiches. Paprika and lime are my favorite ingredients here.

Yellow squash and Pom couscous salad with feta and cilantro from Green Lite Bites. Feta is always the perfect addition to any salad, and the pomegranate juice adds a fun twist.

Another delicious salad from Green Lite Bites (who has been satisfying feta-lovers all summer), a cilantro, lime and chickpea salad with feta. Or maybe the basil, feta and cucumber salad.

If you love basil, how about trying an asparagus basil salad from Elana’s Pantry.

For a heartier salad, Chocolate and Zucchini has a Tomato and Einkorn Wheat (or Spelt) Salad that might fill you up.

And finally, for something a bit different, Sprouted Kitchen has a nectarine and fennel salad with avocado and pistachio that might change things up!
